Job Description

As the kitchen leader, the Chef coordinates, directs, and supervises all kitchen operations and its various departments. They organize and coordinate the team's work, manage inventory, ensure the smooth running of the service, and develop menus. They are responsible for hygiene and safety.

Key Deliverables

  • Organizes and supervises the implementation of preparations based on occupancy and consumption forecasts
  • Develops menus and cards in collaboration with the Sous-Chef and the Catering Manager
  • Produces and prepares dishes according to the technical specifications and sends them on time and at the right temperature
  • Maintains technical data sheets and creates new ones
  • Is at the “Pass” during services: ensures compliance with the maximum waiting times recommended by the brand, the presentation of the dishes, the temperature of the dishes, etc.
  • Keeps informed of new restaurant trends
  • Embody the Heartist spirit in interactions with customers
  • Knows the services offered by the hotel, informs the customer of their request and encourages them to use them
  • Responsible for food and beverage inventory
  • Performs inventories, data entry, analyzes and explains consumption discrepancies
  • Ensures the proper use and sustainability of the equipment and materials of his department in collaboration with management
  • Participates in the choice of investments for his department
  • Meets budgeted productivity ratios
  • Regularly measures the quality of services through customer feedback and quality audits
  • Identifies and follows up on order requirements
  • Ensures that hygiene and safety rules are respected and applied in his department, in particular HACCP standards
  • Ensures that food is stored in accordance with current hygiene standards
  • Checks the good condition and cleanliness of his employees' uniforms
  • Ensures compliance with safety instructions on the use of equipment
  • Respects the commitments of the “Environmental Charter” made on the establishment
  • Knows and applies the procedures to follow in the event of a fire evacuation
  • Knows and applies the Planet21 program policy

Essential Qualities

Essential Qualities
  • Professional diploma in Culinary Arts or restaurant management
  • At least 2 years of proven professional experience as a chef,
  • Mastery of culinary techniques and knowledge of different types of cuisine, particularly French cuisine.
  • Knowledge of food hygiene and safety regulations
  • Creativity and ability to develop innovative and balanced menus.
  • Management skills to coordinate the work of the kitchen team and manage resources.
  • Excellent organizational skills to plan kitchen activities.
  • Ability to work under pressure and make quick decisions.
  • Communication skills to interact with kitchen staff, suppliers and customers.
  • Sense of cost management and ability to optimize resources.
  • Knowledge of French and English
